We repeated breakfast this morning with our favorite tofu, bean & potato burrito, with a side of beans and black coffee. See how I told you we repeat?

For lunch we both had our classic lunch salad and leftover spaghetti from last night.  But tonight: tonight, friends; tonight is TACO NIGHT.

Justin made some more guacamango to go with dinner, and also white bean hummus for snacking.

Here’s the Hummus Recipe

  • 1 can of cannelini beans, rinsed and drained
  • 1T tahini
  • 2T lemon juice
  • 1T water
  • 1t garlic powder (or a minced clove)
  • 1/2t salt
  • garnished with smoked paprika (mild)

Blend to puree; sprinkle with paprika. Serve with chips or Wasa crackers.

Taco Fever:

We made our tacos with seasoned jackfruit, lettuce, tomato, olives, and onions (with Frank’s Red Hot on top). We also made refried beans and “spanish” rice, but I only quote it because I don’t think our method is very traditional. Justin made the rice using a little bit of our leftover spaghetti sauce, some frozen corn, cumin, and paprika.For the refried black beans, we saute onion with beans, season with coriander, paprika, salt, pepper, and cumin, and then mash with a tiny bit of oil.  I don’t have photos of that process as our camera was really low on power, eventually requiring a battery charge (where it sits now).

Seasoned Jackfruit

So Justin & I really love jackfruit. It’s “meaty” and really quick to cook up. I like to pan fry it, but I’m on this “no-oil” kick, so I dry-cooked it on the skillet, added some onions and spices (using this “taco seasoning” recipe as a guide) and then simmered it in water to create a light sauce.

We used this as our “taco meat,” and then topped it with all of our fresh business…

Crazy Cupcakes

So this vegan chocolate cake is so freaking good, I can’t even begin to tell you. I saw it on one of those Tip Hero videos a while back, and altered it to lower the sugar content to half. Sometimes I make it like a regular cake, but mostly I like to make it as cupcakes. We usually just eat it without frosting.

  • 1-½ cup all-purpose flour
  • 3 tablespoons cocoa powder
  • ½ cup granulated sugar
  • 1 teaspoon baking soda
  • teaspoon kosher salt

Mix these dry ingredients together first, then make three indents into the powder and add:

  • 1 teaspoon white vinegar
  • 1 teaspoon pure vanilla extract
  • ¼ cup vegetable oil
  • 1 cup water

Mix, fill cups ¾, and bake at 350 for about 15 minutes or until a toothpick comes out clean.  Eat plain or sprinkle with powdered sugar.
